Now that it’s summer, we’re all a little more conscious of eating clean and staying in shape. So a quick meal that’s easy to prep is ideal. Whether you’re a busy female entrepreneur or not, it’s nice to have simple but delicious options. Here’s a go to meal that I make often for dinner. Keep in mind, I’m no Martha Stewart in the kitchen, but I certainly like to pretend when I’m prepping dinner. With my family running in opposite directions all day, it’s nice to come home to a healthy and oh SO yummy dinner!
It’s super easy, so here’s what you’ll need for this favorite simple summer recipe:
- Grilled chicken breast – My husband and I will grill several breasts of chicken on a Sunday night to repurpose ALL week long. This meal is the perfect example of repurposing the chicken.
- Whole wheat/grain pasta
- Portabella Mushrooms
- Sliced Zucchini
- Lemon Juice
Put a little bit of oil in the bottom of your pan. Throw in your already cooked cubed chicken breast to reheat. Toss in that zucchini, add the mushrooms and mix all together over medium heat.
Pretty easy so far right?
In this medley of goodness, I add lemon pepper, basil, garlic salt, and adobo. Throw in some lemon juice and the butter too!
Cook your pasta separately.
Then cover, and let it simmer on low for 10 minutes.
Once your pasta is done, put about a handful on your plate (that’s the most I’ll do, but my husband is a different story ☺). Then it’s time to load up with your chicken and veggies on top. Drizzle that sauce it cooked in over the top. Mmmmm! You’ve got yourself one clean, easy home cooked delight!
The wine is optional. BUT I highly suggest this fabulous Jim Olsen Chardonnay. I mean, it pairs well…so why not? Plus, I’m a sucker for great packaging.
